Cachaça is the national spirit of Brazil and the chief ingredient of the caipirinha cocktail. It's made from distilled sugar cane, and produces a crisp, clean white spirit. Sagatiba makes both Pura, distilled five times making it better suited to making cocktails, and Velha, which is aged for two years in oak barrels, where it gains extra smoothness and character. With its citrus and caramel notes it's one of the few Cachaças that non-indigenous drinkers can drink neat.
Caipirinhas should be consumed with the sun on your face and sand between your toes. Straight Velha, on the other hand, is warming enough for year-round enjoyment. If you're intent on mixing it, try adding two measures of Velha and one of syrup to a cup of hot, fresh coffee. Top with whipped cream and coffee beans for the perfect after-dinner treat.
